- Preheat your oven to 375 degrees Fahrenheit.
- Peel and slice the apples into uniform pieces.
- In a large bowl, combine apples, monk fruit, cinnamon, nutmeg, and lemon juice.
- Toss thoroughly and let sit for 15 minutes.
- Line a pie dish with one crust, add the apple mixture, and dot with cubed butter.
- Top with the second crust, seal the edges, and cut vents in the top.
- Bake for 50 minutes until the crust is golden brown and the filling is bubbling.
Notes
Ensure your butter is very cold to keep the crust flaky. You can brush the top of the pie with a little almond milk or a beaten egg white for a better golden finish if desired. Store leftovers in the refrigerator for up to 3 days.
