  • 1 medium Granny Smith apple, peeled and diced into 1/2 inch cubes
  • 2 tablespoons brown sugar, divided
  • 1/4 teaspoon ground cinnamon, divided
  • 3 tablespoons quick oats
  • 1 tablespoon all-purpose flour
  • 2 tablespoons unsalted butter, melted and slightly cooled

Method
 

  1. Place the diced apples, 1 tablespoon of brown sugar, and half of the cinnamon into a microwave-safe mug.
  2. Stir well to coat the apples and microwave on high for 60 seconds to soften the fruit.
  3. In a separate small bowl, combine the quick oats, flour, the remaining tablespoon of brown sugar, the remaining cinnamon, and melted butter.
  4. Mix until it forms a coarse, crumbly topping.
  5. Spread the topping evenly over the softened apples in the mug.
  6. Microwave on high for an additional 90 to 120 seconds until the topping is firm and apples are tender.

Notes

Ensure your mug is microwave-safe. For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend. Do not use steel-cut oats as they will not cook properly in this time frame.
