  • 16 oz Mascarpone cheese (room temperature)
  • 1 cup Pure pumpkin puree
  • 24 Ladyfingers (Savoiardi)
  • 1.5 cups Strong chilled coffee
  • 3/4 cup Powdered sugar (sifted)
  • 2 tsp Pumpkin spice

Method
 

  1. Whisk the mascarpone cheese in a large chilled bowl until smooth and creamy.
  2. Fold in the pumpkin puree, powdered sugar, and pumpkin spice until the mixture is uniform.
  3. Whip the mixture for two minutes to ensure maximum aeration and a light consistency.
  4. Dip each ladyfinger into the chilled coffee for one second to avoid oversaturation.
  5. Arrange a single layer of dipped ladyfingers in the bottom of a glass baking dish.
  6. Spread half of the pumpkin mascarpone mixture evenly over the ladyfingers.
  7. Repeat the layering process once more until all components are used.
  8. Refrigerate the dish for at least six hours to allow the flavors to meld completely.

Notes

Use cold coffee to prevent the ladyfingers from becoming too soft. Ensure you use pure pumpkin puree, not pumpkin pie filling. For best results, use freshly ground pumpkin spice for a more potent flavor profile.
