  • 8 ounces cream cheese, softened
  • 1/2 cup brown sugar, packed
  • 2 teaspoons pumpkin pie spice
  • 2 cups whipped topping, thawed
  • 6 full sheets graham crackers, finely crushed

Method
 

  1. In a large mixing bowl, beat the softened cream cheese and brown sugar until smooth and creamy.
  2. Add the pumpkin puree and pumpkin pie spice to the cream cheese mixture.
  3. Whisk thoroughly until the mixture is uniform in color and texture.
  4. Gently fold the thawed whipped topping into the pumpkin mixture until fully combined.
  5. Place one tablespoon of crushed graham crackers into the bottom of each of the four serving glasses.
  6. Spoon a generous layer of the pumpkin mousse over the cracker base.
  7. Repeat the layers of crackers and mousse until the glasses are filled to the top.
