  • 1 cup Powdered Sugar
  • 15 oz Pumpkin Puree (not pie filling)
  • 2 boxes Instant Vanilla Pudding Mix
  • 2.5 cups Cold Whole Milk
  • 2 tsp Pumpkin Pie Spice
  • 16 oz Whipped Topping, thawed

Method
 

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Combine flour, melted butter, and chopped pecans in a mixing bowl until a dough forms.
  3. Press the mixture firmly into a 9x13 inch baking dish.
  4. Bake for 15 minutes until edges are golden brown, then cool completely.
  5. Beat the softened cream cheese and powdered sugar together until smooth, then fold in half of the whipped topping and spread over the cooled crust.
  6. In a separate bowl, whisk together the pumpkin puree, milk, instant pudding mix, and pumpkin pie spice until thickened.
  7. Spread the pumpkin mixture evenly over the cream cheese layer.
  8. Top with the remaining whipped topping and chill for at least 4 hours before serving.

Notes

Toast your pecans in a dry skillet for 2-3 minutes before adding to the crust to enhance their natural nuttiness.
