  • 1 cup pumpkin puree (canned, not pie filling)
  • 1.5 cups chai concentrate
  • 1 cup heavy cream, chilled
  • 0.5 cup powdered sugar, sifted
  • 2 tsp pumpkin pie spice

  1. Whisk the chilled heavy cream in a large bowl until stiff peaks form.
  2. Beat the mascarpone, pumpkin puree, and powdered sugar in a separate bowl until smooth.
  3. Fold the whipped cream gently into the pumpkin mixture until fully combined.
  4. Pour the chai concentrate into a shallow dish for dipping.
  5. Dip each ladyfinger quickly into the chai, ensuring it is moist but not soggy.
  6. Arrange a single layer of dipped ladyfingers in an 8x8 inch square dish.
  7. Spread half of the pumpkin cream mixture evenly over the ladyfingers.
