  • 24 oz cream cheese, room temperature
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 cup graham cracker crumbs
  • 4 tbsp melted butter (for crust)
  • 2 tbsp granulated sugar (for crust)
  • 2 cups chopped pecans
  • 1 cup packed brown sugar
  • 4 tbsp melted butter (for topping)
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F.
  2. Combine graham cracker crumbs, 4 tbsp melted butter, and 2 tbsp sugar; press into a 9-inch springform pan.
  3. Bake crust for 10 minutes then set aside.
  4. Beat cream cheese and sugar until smooth; add eggs and vanilla, mixing on low speed until combined.
  5. Pour batter over crust and bake for 50 minutes until edges are set but center is slightly jiggly.
  6. Mix pecans, brown sugar, and 4 tbsp melted butter in a bowl.
  7. Carefully spread pecan mixture over the warm cheesecake.
  8. Return to oven for 10 minutes to caramelize the topping.
  9. Cool completely and refrigerate for at least 8 hours before serving.
