Ingredients
  

  • 2 cups graham crackers, crushed fine
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened to room temperature
  • 1 cup powdered sugar, sifted
  • 8 oz whipped topping, thawed
  • 6 oz strawberry Jello
  • 2 cups boiling water

Method
 

  1. Combine crushed graham crackers and melted butter in a bowl until reaching the texture of wet sand.
  2. Press the crumb mixture firmly into the bottom of a 9x13 inch baking dish and refrigerate for 15 minutes to firm up.
  3. Beat the softened cream cheese and powdered sugar in a large bowl until smooth.
  4. Gently fold the thawed whipped topping into the cream cheese mixture using a silicone spatula.
  5. Spread the cream cheese mixture evenly over the chilled crust using an offset spatula.
  6. Dissolve the strawberry gelatin in the boiling water in a heat-proof measuring cup and stir until fully dissolved.
  7. Allow the gelatin to cool to room temperature, then carefully pour it over the cream layer.
  8. Refrigerate the entire dessert for at least 4 hours until set before slicing and serving.

Notes

Ensure the cream cheese is fully softened to avoid lumps in the filling. Always let the gelatin cool to room temperature before pouring, otherwise, it may melt the cream cheese layer. Store leftovers in the refrigerator for up to 3 days.
