Method

  3. Fold in the graham cracker crumbs and powdered sugar until a firm dough forms.
  4. Refrigerate the mixture for 30 minutes to make it easier to handle.
  5. Scoop tablespoon-sized portions and roll into uniform balls.
  6. Place balls on a parchment-lined baking sheet.
  7. Melt white chocolate in a microwave-safe bowl using 30-second intervals.
  8. Dip each ball into the melted chocolate using a fork to ensure an even coat.
  9. Return to the parchment paper and refrigerate until the chocolate is set.

Notes

Ensure the cream cheese is at room temperature for the smoothest texture. Do not use pumpkin pie filling as it contains excess sugar and spices that will affect the consistency. Store in an airtight container in the refrigerator for up to one week.
