  • 2 cups chocolate graham crackers, crushed
  • 1/2 cup butter, melted
  • 16 oz cream cheese, softened
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar, sifted
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 cup heavy cream, divided

Method
 

  1. Combine crushed chocolate crackers and melted butter until the mixture resembles wet sand.
  2. Press the crumb mixture firmly into the bottom of a 9x13 inch baking dish and freeze for 15 minutes.
  3. In a large bowl, beat the softened cream cheese and creamy peanut butter until light and smooth.
  4. Gradually add the sifted powdered sugar while whipping on medium speed.
  5. Fold in 1/2 cup of the heavy cream until the mixture reaches a fluffy, mousse-like consistency.
  6. Spread the peanut butter mixture evenly over the chilled crust.
  7. Heat the remaining 1/2 cup of heavy cream and pour over the chocolate chips, stirring until smooth to create a ganache.
  8. Pour the ganache over the peanut butter layer and spread to the edges.
  9. Refrigerate for at least 4 hours until set before slicing.
