Ingredients

  • 30 Chocolate Sandwich Cookies, finely crushed
  • 6 tablespoons Unsalted Butter, melted
  • 16 ounces Cream Cheese, softened
  • 2 tablespoons Instant Espresso Powder, dissolved in 1 tsp hot water
  • 1 cup Powdered Sugar, sifted
  • 16 ounces Whipped Topping, thawed
  • 1 cup Semi-Sweet Chocolate Chips, divided

Method

  1. Combine the crushed sandwich cookies and melted butter until the mixture resembles wet sand.
  2. Press the cookie mixture firmly into the bottom of a 9x13 inch baking dish.
  3. Freeze the crust for 10 minutes to set the base firmly.
  4. Beat the softened cream cheese and powdered sugar in a large bowl until smooth and fluffy.
  5. Stir in the prepared espresso liquid until fully incorporated into the cream cheese mixture.
  6. Fold in half of the whipped topping gently to maintain the airy texture.
  7. Spread the mocha mixture evenly over the chilled cookie crust.
  8. Spread the remaining whipped topping over the mocha layer.
  9. Top with the remaining chocolate chips and chill for at least 4 hours before serving.

Notes

Chilling for the full 4 hours is critical for the layers to set properly and slice cleanly. Ensure your cream cheese is completely at room temperature to avoid lumps in the filling.
