Ingredients

  • 2 cups raw pecans
  • 1.5 cups Medjool dates, pitted
  • 1/4 cup dark cocoa powder
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 12 pecan halves for garnish

Method

  1. Place the raw pecans into a food processor and pulse until they reach a coarse, crumbly texture.
  2. Add the pitted Medjool dates into the food processor with the pecans.
  3. Incorporate the cocoa powder, vanilla extract, and sea salt into the mixture.
  4. Process on high speed until a sticky, uniform dough forms.
  5. Scoop tablespoon-sized portions and roll into smooth, tight balls.
  6. Press a whole pecan half gently into the center of each ball.
  7. Place the bites on a parchment-lined sheet and chill in the refrigerator for at least 60 minutes before serving.

Notes

Ensure dates are pitted; if they feel dry, soak them in warm water for 10 minutes and drain before using. You can substitute walnuts for a different earthy tone. Keep refrigerated for best texture.
