Ingredients
  

  • 300g Biscoff Cookies
  • 100g Unsalted Butter, melted
  • 500g Cream Cheese, room temperature
  • 250g Biscoff Spread (Smooth)
  • 100g Powdered Sugar
  • 200ml Heavy Cream, chilled

Method
 

  1. Crush the Biscoff cookies into fine crumbs using a food processor or rolling pin.
  2. Combine cookie crumbs with melted butter in a bowl until the mixture resembles wet sand.
  3. Press the crumb mixture firmly into the base of a lined 8x8 baking pan.
  4. Refrigerate the crust for 20 minutes to set.
  5. Beat the cream cheese, Biscoff spread, and powdered sugar together until completely smooth.
  6. In a separate bowl, whip the chilled heavy cream until stiff peaks form.
  7. Gently fold the whipped cream into the cream cheese mixture using a silicone spatula.
  8. Spread the filling evenly over the chilled crust.
  9. Refrigerate for at least 4 hours or overnight to set completely before slicing.
