  • 1 cup 100% pure pumpkin puree
  • 1/2 cup evaporated milk
  • 1/3 cup brown sugar
  • 1 tsp pumpkin pie spice
  • 1 large egg
  • 2 sheets store-bought pie crust
  • Non-stick cooking spray

Method
 

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Lightly grease a mini muffin tin with non-stick cooking spray.
  3. Cut the pie crust into 24 uniform circles using a round cookie cutter.
  4. Press each crust circle gently into the muffin tin compartments.
  5. Whisk the pumpkin puree, evaporated milk, brown sugar, spice, and egg in a bowl until smooth.
  6. Pour one tablespoon of the mixture into each prepared crust.
  7. Bake for 20 minutes or until the custard is set.
  8. Remove from oven and allow to cool before serving.

Notes

Ensure you use 100% pumpkin puree and not pre-mixed pumpkin pie filling. If you do not have pumpkin pie spice, you can substitute with a blend of ground cinnamon, ginger, cloves, and nutmeg.
