- In a separate bowl, whip the heavy cream with the remaining powdered sugar and vanilla extract until stiff peaks form.
- Gently fold in the remaining cookie butter until just combined.
- Top each cheesecake with the whipped mixture and refrigerate for 4 hours until fully set.
