- Preheat your oven to 350 degrees Fahrenheit.
- Combine almond flour and melted butter in a medium mixing bowl.
- Press the mixture firmly into an 8x8 inch square baking dish lined with parchment paper.
- Bake the crust for 10 minutes until lightly golden brown.
- Beat the softened cream cheese and sweetener together until light and fluffy.
- Add the eggs one at a time, beating until fully incorporated into the mixture.
- Pour the cream cheese filling evenly over the pre-baked almond crust.
- Scatter the fresh cranberries across the top of the batter.
- Bake for 30 minutes until the edges are set and the center still has a slight jiggle.
- Allow to cool completely before slicing into bars.
Notes
Ensure all ingredients are at room temperature to avoid a lumpy cheesecake texture. Use fresh cranberries for the best results; if using frozen, thaw and pat them very dry. Store bars in the refrigerator for up to 5 days.
