  • 2 cups blanched fine-ground almond flour
  • 1/2 cup melted butter
  • 16 oz full-fat cream cheese, softened
  • 3/4 cup powdered erythritol or monk fruit blend
  • 1.5 cups fresh cranberries
  • 2 large eggs, room temperature

Method
 

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Combine almond flour and melted butter in a medium mixing bowl.
  3. Press the mixture firmly into an 8x8 inch square baking dish lined with parchment paper.
  4. Bake the crust for 10 minutes until lightly golden brown.
  5. Beat the softened cream cheese and sweetener together until light and fluffy.
  6. Add the eggs one at a time, beating until fully incorporated into the mixture.
  7. Pour the cream cheese filling evenly over the pre-baked almond crust.
  8. Scatter the fresh cranberries across the top of the batter.
  9. Bake for 30 minutes until the edges are set and the center still has a slight jiggle.
  10. Allow to cool completely before slicing into bars.

Ensure all ingredients are at room temperature to avoid a lumpy cheesecake texture. Use fresh cranberries for the best results; if using frozen, thaw and pat them very dry. Store bars in the refrigerator for up to 5 days.
