  • 1/2 cup blanched almond flour
  • 3 tbsp grass-fed butter, melted
  • 1/3 cup powdered erythritol
  • 1 tsp ground cinnamon
  • 1 tsp pure vanilla extract

Method
 

  1. Toast the raw pecans in a dry pan over medium heat for 5 minutes until fragrant.
  2. Process the toasted pecans in a food processor until they reach a coarse, crumbly consistency.
  3. Add the almond flour, powdered erythritol, and cinnamon to the food processor and pulse until combined.
  4. Melt the butter in a microwave-safe bowl and stir in the vanilla extract.
  5. Pour the butter mixture into the dry pecan blend while the processor is running to ensure even distribution.
  6. Scoop one tablespoon of the mixture and roll firmly between your palms into tight, uniform balls.
  7. Chill in the refrigerator for 30 minutes to allow the butter to set.

Notes

Be careful when toasting nuts to avoid burning them, which can create a bitter flavor. A cookie scoop helps maintain uniform sizes for even chilling. Store these in an airtight container in the refrigerator for up to one week.
