  • 300g Biscoff cookies, finely crushed
  • 100g unsalted butter, melted
  • 500g cream cheese, room temperature
  • 200g smooth Biscoff spread
  • 300ml heavy cream, chilled
  • 100ml salted caramel sauce

  1. Combine the crushed Biscoff cookies and melted butter in a bowl and press firmly into the base of a 9-inch springform pan.
  2. Refrigerate the crust for 30 minutes to set.
  3. Beat the room-temperature cream cheese and Biscoff spread together until perfectly smooth.
  4. Whip the chilled heavy cream in a separate bowl until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture until combined.
  6. Pour the filling over the prepared crust and smooth the top.
  7. Drizzle the salted caramel sauce over the surface and swirl with a knife to create a marble effect.
