- In a medium saucepan, whisk together the granulated sugar, cornstarch, and pumpkin pie spice until well combined.
- Gradually pour in the whole milk, whisking constantly to ensure the cornstarch is fully dissolved and no lumps remain.
- Stir in the pumpkin puree until the mixture is completely smooth and uniform.
- Place the saucepan over medium heat and stir constantly to prevent scorching at the bottom.
- Cook for 8 to 10 minutes until the mixture bubbles and thickens to a pudding consistency.
- Remove from heat, stir in the vanilla extract, and divide into serving dishes to cool.
Notes
Ensure you use pure pumpkin puree, not pre-mixed pumpkin pie filling. For a dairy-free alternative, you can substitute the whole milk with an equal amount of oat milk. If desired, chill the pudding in the refrigerator for two hours before serving for a firmer texture.
