Ingredients

  • 16 oz Mascarpone cheese, room temperature
  • 1.5 cups heavy whipping cream, cold
  • 0.5 cup granulated sugar
  • 1.5 cups strong espresso, cooled
  • 24 Savoiardi ladyfingers
  • 2 tbsp cocoa powder, for dusting

Method

  1. Brew the espresso and pour it into a shallow dish, letting it cool completely.
  2. In a chilled bowl, whip the cold heavy cream until firm peaks form.
  3. In a separate bowl, gently fold the room-temperature mascarpone and sugar into the whipped cream until smooth and uniform.
  4. Quickly dip each ladyfinger into the cooled espresso for one second per side.
  5. Arrange half of the dipped ladyfingers in an even layer at the bottom of an 8x8 glass dish.
  6. Spread half of the mascarpone cream mixture over the ladyfingers.
  7. Repeat the layering process with the remaining ladyfingers and cream.
  8. Dust the top liberally with cocoa powder.
  9. Chill in the refrigerator for at least six hours before serving to allow flavors to meld.

Notes

Ensure the heavy cream is kept very cold until the moment of whipping to achieve the best stability. Do not over-dip the ladyfingers to prevent the dessert from becoming mushy. Store leftovers covered in the refrigerator for up to 3 days.
