- Preheat oven to 350°F for the crust preparation.
- Combine graham cracker crumbs, 2 tablespoons of sugar, and melted butter; press into a 9-inch springform pan.
- Bake the crust for 10 minutes, then remove and reduce oven temperature to 325°F.
- Beat the softened cream cheese and 1 cup of sugar together until smooth.
- Add eggs one at a time, mixing on low speed until combined.
- Stir in 1 teaspoon of cinnamon and vanilla extract.
- Pour the filling over the crust and bake at 325°F for 55 minutes until the center is set.
- Prepare the topping by heating brown sugar, 2 tbsp butter, remaining cinnamon, and pecans in a saucepan until syrupy.
- Pour the warm pecan mixture over the cooled cheesecake.
- Chill for at least 4 hours before serving.
Notes
Ensure the cream cheese is at room temperature to avoid lumps in the batter. Do not overmix after adding eggs to prevent cracks. The cheesecake is best when allowed to chill thoroughly in the refrigerator to ensure a clean slice.
