Ingredients
  

  • 16 oz cream cheese, room temperature
  • 1 cup heavy cream, chilled
  • 3/4 cup granulated sugar
  • 2 cups Granny Smith apples, finely diced
  • 1.5 cups graham crackers, finely crushed
  • 1/2 cup salted caramel sauce
  • 1/4 cup unsalted butter, melted

Method
 

  1. Combine the crushed graham crackers with melted butter and press into the bottom of a 9-inch springform pan.
  2. Place the crust in the freezer for 10 minutes to set.
  3. In a large bowl, whip the softened cream cheese and sugar until smooth and lump-free.
  4. Add the cold heavy cream to the cream cheese mixture and whip until stiff peaks form.
  5. Fold in the diced apples using a rubber spatula.
  6. Spread the batter evenly over the chilled crust and smooth the top with an offset spatula.
  7. Refrigerate for at least 6 hours until firm.
  8. Drizzle with salted caramel before slicing and serving.
