  • 2 cups all-purpose flour
  • 1 cup old fashioned oats
  • 1 cup brown sugar, packed
  • 1 cup unsalted butter, softened
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 3 medium Granny Smith apples, peeled and sliced
  • 1 tsp ground cinnamon
  • 1/2 cup thick caramel sauce

Method
 

  1. Preheat your oven to 350 degrees Fahrenheit and line a 9x13 inch baking pan with parchment paper.
  2. In a large bowl, mix the flour, oats, brown sugar, and softened butter until the mixture is crumbly.
  3. Press two-thirds of the streusel mixture firmly into the bottom of the prepared baking pan to form the base.
  4. In a separate bowl, beat the softened cream cheese, granulated sugar, and egg together until smooth.
  5. Spread the cheesecake mixture evenly over the crust layer.
  6. In a small bowl, toss the sliced apples with the cinnamon.
  7. Arrange the apple slices evenly over the cheesecake layer.
  8. Drizzle the caramel sauce over the apples.
  9. Sprinkle the remaining streusel mixture over the top.
  10. Bake for 40 to 45 minutes until the edges are golden and the cheesecake is set.
  11. Allow to cool completely before slicing into 16 bars.
