Ingredients

  • 2 cups all-purpose flour
  • 1 cup brown sugar, packed
  • 1 cup unsalted butter, cold and cubed
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 3 medium Granny Smith apples, peeled and thinly sliced
  • 1/2 cup caramel sauce

Method

  1. Preheat your oven to 350 degrees Fahrenheit and line a 9x13 inch baking pan with parchment paper.
  2. Combine flour, brown sugar, and cold butter in a large bowl using a pastry cutter until the mixture resembles coarse crumbs.
  3. Press the dough firmly into the bottom of the prepared pan to create an even layer.
  4. Bake the crust for 15 minutes or until the edges begin to turn light golden brown.
  5. Beat the softened cream cheese and granulated sugar together in a stand mixer until completely smooth.
  6. Add eggs one at a time, mixing on low speed to avoid incorporating too much air.
  7. Pour the cheesecake mixture over the warm crust and spread to the corners.
  8. Arrange the apple slices evenly over the cheesecake layer.
  9. Bake for an additional 30 minutes until the cheesecake is set.
  10. Cool completely before drizzling with caramel sauce and cutting into 16 bars.

Notes

Ensure all dairy and eggs are at room temperature for the smoothest cheesecake layer. For a more intense flavor, sprinkle a dash of cinnamon over the apples before baking. Store in an airtight container in the refrigerator for up to 4 days.
