Ingredients

  • 32 oz cream cheese, room temperature
  • 1.5 cups granulated sugar
  • 4 large Granny Smith apples, peeled and diced
  • 0.5 cup heavy cream
  • 1 tbsp pure vanilla extract
  • 2 cups graham cracker crumbs
  • 0.5 cup butter, melted
  • 4 large eggs

Method

  1. Preheat oven to 350 degrees Fahrenheit for the crust and 325 degrees for the cheesecake.
  2. Combine graham cracker crumbs with melted butter and press firmly into a 9-inch springform pan.
  3. Bake the crust for 10 minutes at 350 degrees Fahrenheit.
  4. Beat cream cheese and sugar together until completely smooth.
  5. Add eggs one at a time, scraping the bowl thoroughly between additions.
  6. Stir in vanilla extract and heavy cream until just combined.
  7. Pour the filling over the crust and bake in a water bath at 325 degrees Fahrenheit for 70 minutes.
  8. Cool the cheesecake completely before adding roasted apples and homemade caramel sauce toppings.

Notes

Use room temperature cream cheese to prevent lumps in your filling. For the best caramel, cook the sugar until it reaches a deep golden amber color. Roast the diced apples slightly before adding them to the top to enhance their caramelized texture.
