  • 2 cups graham cracker crumbs
  • 4 oz cream cheese, softened
  • 1 tbsp pumpkin pie spice
  • 2 tbsp maple syrup
  • 1 cup white chocolate, melted

Method
 

  1. Combine softened cream cheese and pumpkin puree in a large bowl until smooth.
  2. Mix in the maple syrup and pumpkin pie spice until evenly distributed.
  3. Gradually fold in the graham cracker crumbs until a moldable dough forms.
  4. Refrigerate the mixture for 30 minutes to firm up.
  5. Scoop rounded tablespoons of the dough and roll firmly into uniform spheres.
  6. Dip the spheres into melted white chocolate to coat and drizzle with extra chocolate if desired.
  7. Return to the refrigerator for at least 1 hour until the coating has set.

Notes

Ensure the cream cheese is fully softened to room temperature for the smoothest texture. Store these in an airtight container in the refrigerator for up to 5 days. For a crunchier topping, sprinkle extra graham cracker crumbs over the white chocolate before it hardens.
