  • 12 eggroll wrappers
  • 8 oz cream cheese, softened
  • 1 cup apple pie filling, finely chopped
  • 1/4 cup powdered sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 2 cups vegetable oil for frying

Method
 

  1. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Gently fold in the finely chopped apple pie filling and ground cinnamon.
  3. Place an eggroll wrapper in a diamond orientation and spoon two tablespoons of the mixture into the center.
  4. Fold the bottom corner up, fold in the sides, and roll tightly toward the top corner, sealing with a dab of water.
  5. Heat the vegetable oil in a deep pan to 350°F.
  6. Fry the eggrolls in small batches for 2-3 minutes, turning occasionally until golden brown and crispy.
  7. Drain on a wire rack or paper towels before serving.

Keep your unused eggroll wrappers covered with a damp cloth to prevent them from drying out or cracking while you work.
