  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large Granny Smith apples, diced
  • 1.5 cups graham crackers, finely crushed
  • 1 tsp ground cinnamon
  • 1/2 cup butter, melted
  • 1 tbsp sugar (for crust)

Method
 

  1. Combine crushed graham crackers, melted butter, and one tablespoon of sugar in a bowl until the mixture reaches a wet sand consistency.
  2. Press the mixture firmly into a parchment-lined square baking pan and chill in the freezer for 15 minutes.
  3. Beat the softened cream cheese and sugar together with an electric mixer until smooth.
  4. Fold a pinch of cinnamon into the cream cheese mixture.
  5. Spread the cream cheese filling evenly over the chilled graham cracker crust.
  6. Sauté diced apples in a pan with cinnamon and a splash of water until tender, then cool completely.
  7. Spoon the cooled apple topping over the cheesecake layer.
  8. Refrigerate for at least 2 hours or until set before slicing into 16 bites.
