- Preheat oven to 375 degrees Fahrenheit.
- Beat the softened cream cheese with 1/4 cup sugar and a splash of vanilla until smooth, then chill for 10 minutes.
- In a large bowl, whisk together the flour, 1/2 cup sugar, baking powder, and 1 tsp cinnamon.
- In a separate container, whisk the eggs and milk.
- Fold the wet ingredients into the dry ingredients until just combined.
- Gently stir the diced apples into the batter.
- Scoop 1 tablespoon of batter into each lined muffin cup.
- Place a small spoonful of the chilled cheesecake mixture into the center of each cup.
- Cover with the remaining batter until the cups are nearly full.
- Mix oats, brown sugar, melted butter, and remaining cinnamon to create the topping and sprinkle over the muffins.
- Bake for 22 to 25 minutes or until golden brown and a toothpick inserted into the cake part comes out clean.
