Ingredients
  

  • 3 cups rolled oats
  • 3 cups chopped fresh apples (Granny Smith or Honeycrisp)
  • 0.5 cup pure maple syrup
  • 0.3 cup melted coconut oil
  • 1 tbsp cinnamon

Method
 

  1. Preheat your oven to 350 degrees Fahrenheit and line a 9x9 baking pan with parchment paper.
  2. Chop the fresh apples into uniform, bite-sized cubes.
  3. Combine the rolled oats, melted coconut oil, and maple syrup in a large mixing bowl until fully coated.
  4. Press two-thirds of the oat mixture into the bottom of the prepared pan to form a firm base.
  5. Layer the chopped apples over the oat base and sprinkle evenly with the cinnamon.
  6. Top with the remaining oat mixture.
  7. Bake for 30 minutes until the edges turn golden brown.
  8. Cool completely before slicing into individual bars to maintain structural integrity.

Notes

Use cold apples to keep the base from turning mushy before the oven heat sets the oats. Press the bottom oat layer firmly to ensure the bars hold their shape. Store in an airtight container for up to 3 days or freeze for longer storage.
